Veggie Layered Toast

Vegan Veggie Layered Toast

This vegan veggie layered toast is refreshing and perfect for breakfast, lunch or dinner. It's totally customisable to what you prefer, with a few stand out flavours that I wish I had put together before now!

The balsamic vinegar and chilli flakes, along with the pesto hummus are a match made in heaven... and with the tomato and creaminess from the chickpeas, well, it's a must try!


Preparation  : 10 minutes

Makes : 3 slices


Ingredients

• A few Slices of Bread (I use Seeded)

• Pesto Hummus

• Chickpeas

• Large Vine Tomatoes

• Mushrooms

• Lettuce

• Balsamic Vinegar

• Chilli Flakes

• Parsley (Dried or Fresh)



METHOD

  1. Start by slicing and toasting your bread.

  2. Once toasted, spread a layer of pesto hummus over the toast.

  3. In a bowl, crush a few chickpeas, before adding them to your toast (saving some to add to the top once the rest of the toast is layered).

  4. Then place your sliced mushroom, tomato and lettuce onto your toast; then add the remaining chickpeas on top.

  5. In a small bowl, combine some balsamic vinegar with chilli flakes (to your preference) then drizzle over your toast.

  6. Sprinkle some extra chilli flakes and some parsley over the top to finish and enjoy!
