Peanut Butter Bites

PEANUT BUTTER BITES 

These Peanut Butter Bites are perfect to grab as a quick breakfast or afternoon snack and are filled with energy and protein!

I am definitely going through a peanut butter phase at the moment and I’m quite glad about that! It’s helping me realise quite how great peanut butter is and how many ways it can be used. With only 6 ingredients (combining the nuts), these are really easy to make and customisable – don’t like hazelnuts and pecans? Try almonds and walnuts! 

With peanut butter being the dominating flavour (with a little chocolate!) these really feel like a treat, even though they’re packed with protein, fibre and energy! 

Preparation  : 30 minutes

Setting Time : 30 minutes

Makes : 24 – 26 bites


Ingredients

– For the Bites –

• 260g Dates (Once Pitted)

• 130g Peanut Butter 

• 60g Tahini

• 160g Oats 

• 15g Flaxseed 

• 30g Pecans

• 30g Hazelnuts

• 1 tbsp Maca Powder

– For the Decoration –

• Handful of Nuts

• 100g Chocolate

• 50g Dairy-Free Butter


Method

– For the Bites –

  1. Take the stones out of the dates if they’re not already pitted and measure 260g. Place the dates in water whilst you prepare the nuts, to rehydrate any older dates. 

  2. In food processor, chop up the hazelnuts and pecans, then remove and set aside.

  3. Take the dates out of the water, place them in the food processor and pulse. 

  4. Add the oats and pulse again.

  5. Then add the hazelnuts, pecans, flaxseed, peanut butter, tahini and Maca. Continue to pulse until the mixture is combined and becomes cookie dough-like.

  6. Once combined, shape around a tablespoon of mixture into a ball, compacting it together so it hold its shape. Continue with the rest of the mixture and leave the bites to one side.

– For the Decoration –

  1. In a food processor, pulse a handful of nuts (I used hazelnuts and pecans again) into pieces.

  2. Then melt the chocolate and butter in a pan.

  3. With a spoon or a piping bag, drip the chocolate over the bites.

  4. Before the chocolate starts to set, sprinkle the broken nut pieces over the bites, so they set into the chocolate.

  5. Place the bites in the fridge for at least 30 minutes to allow the chocolate to set and enjoy!
