Easy Veg Noodles
Sometime's what you need is just a simple and easy meal... and this fried veg and noodles is perfect for just that.
These veg noodles are fresh and delicious, with a sweet, salty and sticky sauce. Not only is this recipe great for getting your daily veg, but it also means you can use up old veg that's been sitting in the fridge for a while.

Ingredients
• 3 Carrots (roughly 350g)
• 1 Courgette (roughly 200g)
• 2 Red Peppers (roughly 200g)
• 80g Broccoli (whichever type you prefer)
• 100g Mushrooms
• 250g Egg-Free Noodles
• 70g Tamari
• 40g Liquid Smoke
• 80g Maple Syrup
• Sesame seeds and Poppy seeds to serve
Method
Start by slicing all of your veg into strips (or however you'd prefer; I left my mushrooms in chunks). Then transfer the veg to a pan and fry in a small amount oil, until the veg is cooked... this will vary on how you prefer your veg, but I cook mine on a medium heat for 15 - 20 mins.
Whilst the veg is frying, cook your noodles as per the instructions on the packet.
Once cooked, drain the water and leave the noodles in the pan. Add the tamari, liquid smoke and maple syrup, then stir it into the noodles.
Once the veg is cooked, transfer it to the pan with the noodles and return to a low heat. Mix the noodles and veg until the veg is also coated in the sauce. Leave on a low heat for around 5 minutes, until the sauce thickens and becomes a little sticky.
Serve with some sesame and poppy seeds and enjoy!
