Easy Mince Pies

EASY MINCE PIES 

I love baking from scratch and trying new flavours, but sometimes there just isn’t time to try a new recipe. Whenever I want to make something quickly, or just want a ‘cheat day’ with my baking, I fall back on some ready-made pastry and a quick filling! 

There are so many ‘accidentally vegan’ products on the market, which is great! Mince Pies are something that have to be made at Christmas – they mark the start of the Christmas season, right? If you want to make them yourself, but don’t have the time, then buying these two ingredients are perfect. Not only are they quick, but you can design them however you wish! 


Preparation : 10 minutes 

Baking Time : 10 – 12 minutes 

Makes : 18 – 20 mince pies


Ingredients

– For the Mince Pies –

• 500g Vegan Pastry (I used Jus Rol Shortcrust)

• Vegan Mincemeat 

• Small Amount of Milk (I used Oat)

– For the Decoration –

• Icing Sugar to Dust


Method

– For the Mince Pies –

  1. Preheat the oven to 180C fan and put a cupcake tray to one side. 

  2. On a floured surface, roll out the pastry to a thickness of around 1/2 cm.

  3. Cut circles into the pastry, but make sure they are larger than the rim of the slots in the cupcake tray – when they are placed in, they should fill the slot and reach the top the rim. 

  4. Depending on your preference, cut out additional shapes of pastry to place on the top of the mince pies (I cut out stars, making sure they were large enough that they reached the pastry at the sides).

  5. Once the cupcake tray is lined with pastry, fill the pies with your mincemeat, making sure the filling is level to the top of the pastry case or just under (don’t go over the rim as it will bubble out!)

  6. When they’re all filled, carefully brush milk around the edges of the pies and place your decoration on the top of the pies, sticking it to the sides of the pie. Then, brush the top of the pies to help them brown in the oven.

  7. Place in the oven and bake for 10 – 12 minutes, or until the pastry is golden brown. 

  8. When they’re taken out of the oven, take them out of the tray and leave them to cool completely on a rack. 

– For the Decoration –

  1. Simply dust some icing sugar over the mince pies once cooled and enjoy!
