Easy Gazpacho

I am such a lover of soup, so when the hot weather calls and your typical hot soup is not top of the list for refreshing meals, in comes this easy gazpacho! ⁠

This gazpacho is refreshing and full of flavour. There is a little heat from the cumin, but you can always use a little less and build it up to your preferred level. Made in one bowl and a blender, this really is perfect for a hot summer evening! 


Preparation : 10 minutes

Serves : 6 servings

Ingredients

• 1 Red Pepper (200g)

• 1 Yellow Pepper (200g)

• 1 Red Onion

• 5 Large Vine Tomatoes (725g)

• 100g cucumber

• 2 – 4 Garlic Cloves (depending on your preferred strength)

• 50g Breadcrumbs

• 1/4 teaspoon ground cumin



Method

  1. Prepare your veg, dicing the onion and tomato, then slicing the cucumber, peppers and garlic.

  2. Place your prepared veg, along with the breadcrumbs and cumin, into a high powered blender (I use a NutriBullet) and blend until smooth. You may want to add a splash of water if the blender struggles to start with.

  3. Store in an airtight container for up to a week and enjoy fresh from the fridge, served with some fresh cream!
